Yanes Famous Guacamole
3 RIPE AVOCADOS
½ OF A CUP OF FINELY CHOPPED RED ONION
¼ OF A CUP (PACKED) FINELY CHOPPED CILANTRO
JUICE OF 2 FRESH LIMES
1 TSPN SALT & PEPPER
JUICE OF 1 LIME
1/2 RED ONION
1/4 CUP CILANTRO
SALT & PEPPER
Chop ½ of a red onion finely and squeeze the lime juice into a bowl with the red onion. Let this sit for 10-15 minutes.
While the onions are sitting in the lime juice, take the leaves off of the cilantro and chop it finely. Take the avocados out of their peels and mash in a bowl so that it is slightly chunky.
Once the avocados are mashed, add the cilantro, the red onion with lime juice, and ground black pepper and salt. Lastly, mix up your delicious guacamole!
Now, for the the salsa, just like the guacamole, you'll want to pickle the minced onions while you prepare your other ingredients. Then, dice the tomatoes and cilantro. Next, you'll be able to put all ingredients (tomatoes, cilantro, onions, salt and pepper to taste) in a bowl and give it a good mix. Serve with a side of your favorite crunchy shovel-like treats! I prefer tostadas because they are not over $5 for a 13oz bag, and are more authentic, try them out!
To keep your guacamole fresh longer, add one or two of the seeds into the mixture.
To get the most juice out of your limes, roll it on its side while pressing firmly but not too firm as you don’t want to crush them!
Ripe avocados are key! Make sure the avocados are soft to the touch but have some resistance to them.
